Mera mat

I fredags kom en ny Lantlåda från Årstiderna och i den här var det lite nya grönsaker/rotsaker som jag inte har lagat tidigare. Svartrötterna var inte så svåra, jag skalade dem (med plastpåsar på händerna efter att ha läst att man kan behöva lacknafta för att ta bort saften från fingrarna efteråt), la dem i citronvatten en stund, kokade dem i drygt 5 minuter vilket var lite för länge, och sen åt vi dem med jättegod olivolja och getost. Grönkålen har jag precis wokat och det blev väldigt gott. Vad jag ska göra med pepparroten har jag ingen aning om. Nån som har nåt tips?

I subscribe to a box of organic vegetables. You can choose different types of boxes and I've opted for the one with many vegetables produced as close to where I live as possible (and sometimes that is a farm just outside Stockholm, but I also got a pepper (I think, or a lemon or maybe thyme) from Africa once. In this week's box there were cabbage, potatoes, carrots (lovely carrots from Denmark), banana
shallots, green kale, black salsify roots (I don't know what you call them), parsnips, beetroots (did you just call them beets? the red ones?), swedes and fresh horse radish. I had never cooked with the black salsify roots, kale or horse radish before (the call this vegetable box "the box for the brave") which was fun. I boiled the black salsify roots and served them with a nice olive oil and cold cuts and goat's cheese. I used the kale in a wok dish, with lots of other vegetables (leeks, carrots, cauliflower, peppers, onions) and some pork marinated in ginger, lime and soy sauce. I don't know what to do with the horse radish, but Eva suggested I grate it on salmon and bake the fish in the oven so I'll try that. Årstiderna, the company I buy the produce from have no information in English, but there are similar companies in Britain (and probaly in USA) such as Cole & Abel where you can read a bit about why, what and how.
