Yesterday I couldn't come up with anything for dinner so the kids had pasta and ready-made meatballs (in Swedish "snabbmakaroner och färdiga köttbullar" fast det var ekologiska köttbullar). J and I had bread and salami. But today is another day and on my way back from leaving N at school I popped into the shop and found fresh saithe (poolock? coalfish? coley? Boston Blue???) and I'm making a fish wok for dinner. The fish will marinate in lime juice, garlic, fish sauce and a little red curry paste. The rest of the ingredients will be fresh corn, green kale (it tastes more like pak choi than common white cabbage does in a wok and it's "delish"). I'll also put in some yellow pepper, leek and pour over a tin of coconut milk. Unfortunately they didn'y have any fresh cilantro in the shop, maybe I'll use parsley instead. I'll serve the wok with both brown and white rice. Oh, I can't wait! I love it when I can comne up with interesting things to do with the veg I get in my oragnic box every other week. Ususally I just bung everything in the oven and serve with chicken.
This may all go horribly wrong, I've never cooked fresh saithe before, but right now I feel like a bit of a (food) genius.
